Fresh and vibrant rice-paper rolls filled with crisp cucumber, creamy avocado, and fragrant mint, perfect for a light, healthy snack or appetizer.

Ingredients

Rice Paper Wrappers

  • 8 sheets rice paper wrappers (round, 22cm/8½”)

Vegetables

  • 1 large English cucumber (julienned (~150g))
  • 1 medium ripe avocado (thinly sliced)
  • ½ bell pepper bell pepper (thinly sliced)
  • 50 g rice vermicelli (optional, cooked)
  • 16–20 leaves fresh mint leaves
  • ½ cup peanut dipping sauce

Instructions 

  • Prepare all ingredients: julienne cucumber and bell pepper, slice avocado, wash mint leaves.
  • Dip a rice-paper wrapper in warm water for 8–10 seconds, then lay flat on a damp towel.
  • Layer vermicelli, cucumber, avocado, bell pepper, and mint near the bottom of the wrapper.
  • Fold the bottom over the filling, then fold sides inward and roll tightly away from you.
  • Place rolls seam-side down and let rest for 2 minutes before slicing and serving with peanut sauce.

Notes

Keep the rolls moist by covering with a damp cloth until serving.
