Ingredients

  • 1 lb breakfast sausage (turkey or chicken sausage)
  • 4 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • salt and pepper to taste

Instructions 

  • Brown the sausage in a skillet, drain fat, and set aside.
  • Spray the crockpot with non-stick spray.
  • Layer potatoes, sausage, and onions in the crockpot.
  • Whisk eggs, milk, salt, and pepper; pour over the mixture.
  • Sprinkle cheese on top and cook on low for 8 hours.
  • Serve warm with optional toppings.
