Ingredients

Butter

  • 2 tablespoons butter

Vegetables

  • 1 yellow onion yellow onion (diced)
  • 10 cloves garlic (minced)
  • 1 lb carrots (peeled and diced)
  • 2 large russet potatoes (peeled and diced)
  • 32 oz vegetable broth
  • 2 cups finely diced broccoli florets
  • 8 oz yellow sharp cheddar cheese (freshly grated)
  • 2 cups whole milk
  • 2 tablespoons all-purpose flour
  • to taste salt salt

Instructions 

  • Melt butter in a large pot and cook garlic and onion until translucent.
  • Add carrots and cook for 5 minutes, then add potatoes and broth. Boil until tender.
  • Mix milk and flour, then stir into the soup. Add broccoli and simmer for 10-15 minutes.
  • Add cheese and stir until melted. Season with salt before serving.

Notes

For a creamier texture, blend part of the soup before adding cheese.
