Ingredients

Vegetables

  • 1 cup diced onion
  • 1 cup broccoli florets
  • 1 cup diced red bell pepper
  • 1 cup diced yellow bell pepper
  • 1 cup diced zucchini

Seasonings

Oils

  • 4 tablespoon olive oil
  • 2 tablespoon olive oil
  • 1 tablespoon finely chopped garlic

Flour and Milk

  • 2 tablespoon whole wheat flour
  • 2 cup milk
  • 1/4 teaspoon nutmeg powder
  • 1 teaspoon thyme

Cheese

  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated parmesan cheese

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté onions, bell peppers, zucchini, and garlic in 2 tbsp olive oil until tender.
  • In a separate pan, whisk flour into milk with nutmeg and thyme; cook until thickened.
  • Combine vegetables with sauce, then transfer to a baking dish. Top with cheeses.
  • Bake for 25-30 minutes until golden and bubbly.
