A quick and flavorful pasta dish featuring mushrooms, spinach, and a creamy Parmesan sauce, perfect for weeknights.

Ingredients

pasta

  • 8 oz pasta of choice

olive oil

  • 2 tbsp olive oil

mushrooms

  • 1 cup mushrooms, sliced

garlic

  • 3 cloves garlic, minced

spinach

  • 1 cup spinach

heavy cream

  • 1 cup heavy cream

Parmesan cheese

  • 1/2 cup grated Parmesan cheese

salt and pepper

fresh basil

Instructions 

  • Cook pasta until al dente, then drain.
  • Sauté mushrooms in olive oil until golden.
  • Add garlic and cook for 1 minute, then stir in spinach until wilted.
  • Pour in heavy cream, simmer, then stir in Parmesan until smooth.
  • Combine sauce with pasta, season with salt and pepper, and garnish with basil.

Notes

For a lighter version, use half-and-half instead of heavy cream.
