A delicious and creamy salmon pasta dish that's quick to prepare and perfect for a satisfying meal.

Ingredients

Pasta

  • 8 ounces Short Pasta of Choice (or lentil pasta)

Oil

  • 1 tablespoon olive oil (or avocado oil)

Seasoning

  • to taste Kosher salt and ground pepper

Salmon

  • 1 pound skinless salmon fillets

Seasoning

  • 1/2 teaspoon Italian seasoning

Garlic

  • 3-4 cloves garlic (minced)

Sun-dried Tomatoes

  • 1/4 cup sun-dried tomatoes (chopped)

Flour

  • 1 tablespoon gluten-free flour (or any flour)

Milk

  • 1 1/2 cups skimmed milk (or any other milk)

Spinach

  • 5 ounces fresh spinach (or frozen, strained)

Instructions 

  • Cook pasta until al dente, drain, season, and set aside.
  • Season salmon with salt, pepper, and Italian seasoning. Cook in oil until flaky, then set aside.
  • Sauté garlic and sun-dried tomatoes, stir in flour, then gradually add milk to make sauce.
  • Add spinach, cook until wilted, then combine with pasta and flaked salmon. Serve hot.

Notes

For extra flavor, garnish with fresh parsley and pepper.
