Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (the star of the dish, juicy and tender)
  • 1 cup long-grain white rice (fluffy texture that absorbs all the delicious sauce)
  • 2 cups chicken broth (adds depth and richness; use low-sodium if preferred)
  • 1 cup heavy cream (lends its incredible creaminess; can be substituted with half-and-half for a lighter texture)
  • 1 small onion (finely chopped, brings sweetness and aroma to the dish)
  • 3 cloves garlic (minced, infuses the meal with its robust flavor)
  • 2 tbsp olive oil (for sautéing, giving a lovely golden finish)
  • to taste salt salt (enhances all the flavors; kosher salt works well)
  • to taste pepper pepper (adds a hint of warmth to the dish)
  • for garnish fresh parsley parsley (brightens the dish with color and freshness)

Instructions 

  • Season chicken with salt and pepper, then brown in heated olive oil for 4-5 minutes per side.
  • Remove chicken, sauté onion and garlic until fragrant, about 2-3 minutes.
  • Add rice, toast for 3 minutes, then pour in chicken broth and heavy cream. Return chicken to skillet.
  • Reduce heat, cover, and simmer for 20-25 minutes until chicken is cooked and rice is tender.
  • Stir in Parmesan cheese until melted, adjust seasoning, then garnish with parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk.
