A rich and creamy mushroom pasta dish that's perfect for a comforting dinner. Loaded with savory flavors and Parmesan cheese, it's easy to make and delicious.

Ingredients

Dairy and Oils

  • 5 Tbsp unsalted butter
  • 1 large shallot, chopped (about 1/2 cup)
  • 16 oz baby bella or white mushrooms, thinly sliced
  • 4 cloves garlic, minced
  • 2 Tbsp all-purpose flour
  • 1/2 cup chicken broth
  • 2 cups half and half
  • 2 tsp soy sauce
  • 1/2 cup freshly grated Parmesan cheese (plus more for serving)
  • 1-2 Tbsp finely chopped fresh parsley
  • 16 oz dry fettuccine

Instructions 

  • Melt butter in a skillet, cook shallots 2-3 min, then add mushrooms and cook until tender, 10-12 min.
  • Add garlic and Italian seasoning; cook 30 sec. Stir in flour and cook 1 min.
  • Pour in chicken broth, simmer, then add half and half and soy sauce; cook until thickened, 4-5 min.
  • Stir in Parmesan and parsley, season, then toss with cooked pasta. Serve with extra cheese.

Notes

Reserve some pasta water to adjust sauce consistency if needed.
