Ingredients

Broth & Dairy

  • 1 cup chicken broth
  • 1/2 cup heavy cream

Aromatics & Seasonings

  • 3 cloves minced garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian herbs
  • to taste salt
  • to taste pepper

Main Ingredients

  • 1.5 cups uncooked rice
  • 4 pieces chicken thighs
  • 1 teaspoon paprika
  • 1/4 cup grated parmesan

Garnish & Toppings

  • to taste fresh parsley
  • Thin slices lemon slices

Instructions 

  • Preheat oven to 400°F (200°C). Grease a 9x13-inch dish.
  • Mix broth, cream, garlic, lemon juice, zest, and spices. Pour over rice in dish.
  • Season chicken thighs with paprika, salt, and pepper. Place on rice mixture.
  • Sprinkle parmesan, cover with foil, and bake 35 mins. Uncover and bake 10-15 mins.
  • Rest 5 mins, garnish with parsley and lemon slices before serving.
