A quick and flavorful dish featuring tender chicken in a creamy lemon sauce, perfect for a satisfying meal.

Ingredients

Protein

  • 500 g chicken tenderloins

Dry ingredients

  • 1/4 cup all-purpose/plain flour (use gluten-free if needed)
  • 2 tsp dried oregano

Dairy & fats

  • 1 tbsp butter (See Note 1)
  • 1 tsp extra virgin olive oil
  • 1 tbsp butter (See Note 1)

Aromatics

  • 2 cloves garlic, minced

Cream & zest

  • 1 cup heavy whipping/thickened cream (See Note 2)
  • 1-3 tsp lemon zest (add to taste, See Note 3)
  • 2-4 tbsp lemon juice (freshly squeezed, add to taste, See Note 4)

Herbs & seasoning

  • 1/4 cup flat-leaf parsley, finely chopped
  • sea salt and freshly ground black pepper (to season to taste)

Instructions 

  • Prepare the chicken by removing the tendon, then pat dry. Mix flour, oregano, salt, and pepper; coat chicken.
  • Heat butter and olive oil; cook chicken 2-3 mins per side until cooked through. Set aside.
  • Add butter and garlic to the pan; cook 1-2 mins. Add lemon juice, scraping pan for flavor.
  • Add lemon zest and cream; simmer 3 mins. Return chicken; cook 2-3 mins until sauce thickens.
  • Stir in parsley, season well, and serve immediately.

Notes

Ensure to remove the tendon from the chicken for best texture.
