Instructions
Heat oil in a large pot, sauté vegetables and garlic until soft.
Add broth, chickpeas, quinoa, tomatoes, tomato sauce, and seasonings. Bring to a boil, then simmer for 20-25 minutes.
Stir in spinach and cream, then adjust seasonings.
Serve hot, topped with Parmesan cheese.
Notes
For a creamier texture, add more half and half or heavy cream.
