Creamy Italian Quinoa Soup

A hearty and creamy soup combining quinoa, chickpeas, and vegetables, flavored with Italian seasoning and finished with a touch of cream and Parmesan.

Ingredients

olive oil

  • 2 tablespoons olive oil

vegetables

  • ½ medium onion onion (diced)
  • 3 medium carrots carrots (peeled and diced)
  • 2 stalks celery (diced)

garlic

  • 4 cloves garlic cloves (minced)

broth

  • 4 cups bone broth (chicken or vegetable)

canned goods

  • 1 15-ounce can chickpeas (drained & rinsed)
  • 1 1/4 cup quinoa (uncooked, rinsed)
  • 1 14.5-ounce can diced tomatoes (undrained)
  • 1 8-ounce can tomato sauce

seasonings

  • 1 tablespoon Italian seasoning
  • Pinch red pepper flakes red pepper flakes

greens

  • 2 cups fresh spinach (coarsely chopped)

dairy

  • 1 ½ cups half and half (or heavy cream)

salt and pepper

  • to taste salt and pepper

parmesan cheese

  • for topping Parmesan cheese

Instructions 

  • Heat oil in a large pot, sauté vegetables and garlic until soft.
  • Add broth, chickpeas, quinoa, tomatoes, tomato sauce, and seasonings. Bring to a boil, then simmer for 20-25 minutes.
  • Stir in spinach and cream, then adjust seasonings.
  • Serve hot, topped with Parmesan cheese.

Notes

For a creamier texture, add more half and half or heavy cream.
