A delicious and creamy chicken dish with honey and Dijon mustard, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 2 large chicken breasts (cut lengthwise (about 8 oz each))
  • 1 tbsp olive oil

Seasonings

  • to taste Kosher salt and ground pepper
  • 1/4 tsp garlic powder

Broth & Milk

  • 2/3 cup chicken broth
  • 1 cup milk of choice
  • 1 tbsp gluten free flour

Sauce & Flavorings

  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp chili flakes (optional or to taste)

Vegetables

  • 1 medium head broccoli
  • 2 tbsp fresh parsley (chopped)

Instructions 

  • Heat olive oil in a large pan over medium heat.
  • Season chicken with salt, pepper, and garlic powder, then cook 4-5 minutes per side until golden. Set aside.
  • Whisk flour with milk, then add broth to the pan. Add milk mixture, mustard, honey, and chili flakes; whisk until smooth.
  • Simmer until sauce thickens, then add chicken and broccoli. Cook 8-10 minutes until cooked through and tender.

Notes

For extra flavor, garnish with additional parsley before serving.
