A flavorful and creamy chicken dish served over fluffy basmati rice, infused with herbs and lemon for a vibrant meal.

Ingredients

Rice and Water

  • 1 cup basmati rice
  • 1.75 cups water

Cooking Fats

  • 1 tablespoon butter or olive oil

Seasonings

  • ½ teaspoon salt
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried Italian herbs
  • ½ teaspoon paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • ¼ cup grated parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill or basil (optional)
  • Juice of half a lemon lemon juice

Instructions 

  • Rinse rice, then cook with water, butter/oil, and salt until water is absorbed. Let sit, then fluff.
  • Season chicken with salt, pepper, paprika, and herbs. Sear in skillet until golden and cooked through. Remove and set aside.
  • Sauté onion and garlic in the same skillet. Add broth, simmer, then stir in cream and parmesan. Add herbs and lemon juice.
  • Return chicken to skillet, simmer in sauce for 5 minutes. Serve over rice, garnished with herbs or lemon zest.

Notes

Adjust seasoning and herbs to taste for best flavor.
