Ingredients

Protein

  • 1.5 lbs ground turkey
  • 1.5 cups hot salsa
  • 1.5 cups cottage cheese (preferably 2% or 4% fat)
  • 3 cups fresh spinach
  • 1 tbsp Worcestershire sauce
  • 0.5 medium onion (diced)
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp garlic salt
  • 1 tsp crushed red pepper flakes
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • Salt and pepper to taste Salt and pepper
  • 1 tbsp extra virgin olive oil (for cooking)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until soft.
  • Add ground turkey and cook until browned and crumbly.
  • Stir in hot salsa and Worcestershire sauce; cook to meld flavors.
  • Add cottage cheese and stir until creamy.
  • Mix in spinach, garlic powder, garlic salt, red pepper flakes, oregano, basil, salt, and pepper; cook until spinach wilts.

Notes

For extra flavor, top with fresh herbs or a squeeze of lemon before serving.
