A flavorful and creamy chicken dish infused with garlic, sun-dried tomatoes, and basil pesto, perfect for a quick dinner.

Ingredients

Protein

  • 3-4 pieces chicken breasts, boneless, skinless
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon Italian seasoning
  • 1/2 red onion red onion
  • 3 cloves garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, drained of most oil, chopped
  • 3 pieces bell peppers (1 red, 1/2 yellow, and 1/2 green)
  • 1/2 cup basil pesto
  • 1/2 cup heavy whipping cream
  • 1/2 cup chicken stock
  • to taste salt and pepper Salt and fresh cracked pepper
  • for garnish Chopped fresh basil
  • for garnish Parmesan

Instructions 

  • Heat tomato oil with Italian seasoning and chili flakes; cook chicken 4-5 mins per side until done. Remove and set aside.
  • Mix pesto, cream, and chicken stock; set aside.
  • Sauté onion, garlic, and sun-dried tomatoes; add bell peppers and cook until crisp-tender.
  • Add pesto sauce, return sliced chicken, and cook until heated through. Garnish and serve.

Notes

Use fresh basil and high-quality pesto for best flavor.
