A delicious and comforting dish featuring tender chicken in a creamy garlic sauce served over rice and steamed broccoli.

Ingredients

olive oil

  • 2 tablespoons olive oil

chicken

  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste Salt and pepper

garlic

  • 4 cloves garlic, minced

liquids

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated

seasoning

  • 1 teaspoon Italian seasoning

  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken with salt and pepper; cook 6-8 minutes until golden.
  • Stir in minced garlic; cook 1 minute.
  • Add chicken broth, scrape skillet, and simmer 2-3 minutes.
  • Stir in heavy cream and Parmesan; cook 3-4 minutes until thickened.
  • Add Italian seasoning, return chicken, and cook 2-3 minutes. Serve over rice with broccoli and garnish.

Notes

For extra flavor, add a squeeze of lemon or a pinch of red pepper flakes.
