A quick and flavorful pasta dish combining cheese tortellini, cooked chicken, and a rich basil pesto cream sauce.

Ingredients

Pasta

  • 1 lb cheese tortellini (fresh or refrigerated)
  • 2 cups cooked chicken (shredded or cubed)

Sauce

  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream or half and half
  • 0.5 cup basil pesto (store-bought or homemade)
  • 0.25 cup grated Parmesan cheese

Seasonings

  • to taste salt and black pepper
  • optional red pepper flakes
  • optional baby spinach

Instructions 

  • Cook tortellini in salted boiling water until al dente, then drain.
  • Heat oil or butter in a skillet, sauté garlic until fragrant.
  • Pour in cream, simmer until slightly thickened, then stir in pesto and Parmesan.
  • Add cooked chicken and tortellini, stir to coat, and heat through.
  • Season with salt, pepper, red pepper flakes, and add spinach if desired; serve hot.

Notes

For a lighter version, use half-and-half and reduce cheese.
