A comforting and creamy soup combining tender chicken, pasta, and greens in a flavorful broth.

Ingredients

Protein

  • 1 lb chicken breast, diced

Pasta

  • 1 cup pasta (such as rotini or penne)

Vegetables

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Broth & Dairy

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach (or other greens)

Seasonings & Oil

  • Salt and pepper to taste
  • Olive oil

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until soft.
  • Add diced chicken and cook until no longer pink.
  • Pour in chicken broth and bring to a boil.
  • Add pasta and cook until al dente.
  • Stir in heavy cream and spinach, season with salt and pepper, and heat through.

Notes

Use fresh greens for best flavor and adjust seasoning as needed.
