A flavorful and creamy pasta dish featuring tender chicken and colorful fajita vegetables, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (sliced)
  • 1 tablespoon olive oil
  • 1 red bell pepper red bell pepper (sliced)
  • 1 green bell pepper green bell pepper (sliced)
  • 1 yellow bell pepper yellow bell pepper (sliced)
  • 1 small onion (sliced)
  • 3 cloves garlic (minced)
  • 2 teaspoons fajita seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese (softened)
  • ½ cup grated Parmesan cheese
  • 1 can (10 ounces) diced tomatoes (or Rotel for extra spice)
  • ½ teaspoon red pepper flakes (optional for spice)
  • 12 ounces penne pasta (or preferred pasta)
  • 1 tablespoon butter

Garnish

  • to taste Fresh cilantro and lime wedges (for garnish)

Instructions 

  • Sauté sliced peppers, onion, and garlic in olive oil until tender.
  • Add sliced chicken and cook until no longer pink.
  • Stir in fajita seasoning, smoked paprika, salt, and black pepper.
  • Add chicken broth, heavy cream, cream cheese, and diced tomatoes; simmer until thickened.
  • Cook pasta separately, then combine with sauce and butter; garnish with cilantro and lime wedges.

Notes

For extra spice, add more red pepper flakes or diced jalapeños.
