A delicious and creamy pasta dish featuring tender chicken, cherry tomatoes, spinach, and a flavorful sauce, all cooked in one pan for easy cleanup.

Ingredients

Pasta

  • 2 cups dry penne pasta (cooked according to package instructions)

Chicken

  • 1 lb chicken breasts (boneless, skinless)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp flour

Butter

  • 4 tbsp butter (divided)
  • 4 cloves garlic (pressed)
  • 1 cup cherry tomatoes
  • 1.5 tbsp italian seasoning blend
  • 1.5 cups cooking cream
  • ½ cup chicken broth
  • ½ cup tomato sauce (of choice)
  • 3 cups spinach (about 3 large handfuls)
  • ¼ cup Parmesan cheese (shredded (plus additional for serving))

Fresh basil

  • fresh basil (for serving)

Instructions 

  • Cook pasta according to package instructions.
  • Season chicken with salt, pepper, and flour; cook in a pan with half the butter until no longer pink, then set aside.
  • Sauté garlic in remaining butter, add tomatoes and spices; cook until tomatoes soften. Add cream, broth, and tomato sauce, simmer.
  • Stir in spinach and Parmesan until wilted, then add cooked chicken and pasta; stir and serve with basil and extra Parmesan.

Notes

Use fresh basil for the best flavor and adjust seasoning to taste.
