A delicious and creamy pasta dish featuring tender chicken, fresh spinach, and a zesty lemon-herb sauce, perfect for a satisfying meal.

Ingredients

Pasta

  • 8-10 ounces uncooked pasta
  • 2 pieces chicken breasts (cut into small bite-size pieces)
  • 1½-2 teaspoons lemon pepper seasoning or salt pepper
  • 1 small leek (chopped)
  • 2 green green onions (ends trimmed and sliced)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • cup chicken broth
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon Dijon mustard
  • 1-¼ cups heavy cream
  • 4 cups fresh baby spinach
  • ½ cup freshly grated mizithra or parmesan cheese
  • ¼ cup fresh herbs (minced blend of parsley and dill)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • Season chicken with lemon pepper and cook in a skillet until golden and cooked through, then set aside.
  • In the same skillet, melt butter and cook leeks, garlic, and green onions until softened.
  • Add chicken broth, lemon juice, lemon zest, and Dijon mustard; simmer briefly, then stir in spinach and cook until wilted. Return chicken, add cream, and simmer for 2-3 minutes.
  • Combine pasta with sauce and herbs, then stir in cheese. Serve hot garnished with additional herbs or lemon slices.

Notes

Feel free to adjust seasoning and cheese to taste for best flavor.
