Instructions
Heat olive oil and sauté celery, carrots, and onion for 5-7 minutes.
Add garlic and flour; cook for about a minute.
Pour in broth, scraping browned bits; add Italian seasoning, rice, and cream. Bring to a boil, then simmer for 10 minutes.
Add chicken, cook for 7-10 minutes until done. Season with salt and pepper.
Notes
Stir occasionally during simmering to prevent rice from sticking.
