A flavorful and creamy Cajun pasta dish featuring chicken or shrimp, sun-dried tomatoes, and a rich almond milk sauce.

Ingredients

Pasta

  • 8 oz uncooked pasta (see blog notes for options)

Protein

  • 2 lbs uncooked, cubed chicken breast or shrimp (could use a mixture of both)

Seasoning

  • 3 tsp Cajun Seasoning (see blog notes for options)

Sauce & Flavorings

  • 1.5 cup almond milk
  • 0.5 cup fat free chicken stock
  • 2 tsp cornstarch
  • 0.5 cup sliced sun dried tomatoes (not in oil, wash and drain if in oil)
  • 2 green onions chopped
  • 0.5 tsp dried basil
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.5 cup grated parmesan cheese

Instructions 

  • Cook pasta according to package instructions, then drain and set aside.
  • Season chicken/shrimp with 2 tsp Cajun spice, sear until browned, then set aside.
  • Deglaze skillet with chicken stock, then add almond milk, cornstarch, seasonings, and simmer until thickened.
  • Add tomatoes, green onions, salt, and cook until sauce thickens. Stir in parmesan and cooked protein.
  • Combine with cooked pasta, toss, and heat through before serving.

Notes

For extra flavor, sprinkle with additional parmesan or fresh herbs before serving.
