A flavorful and creamy Cajun chicken pasta dish that's quick to prepare and perfect for a satisfying meal.

Ingredients

Pasta

  • 12 ounces penne pasta

Sauce Base

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup diced white onion
  • 1 red bell pepper seeded and diced red bell pepper
  • 4 cloves garlic (minced)
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon paprika powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 0.25 teaspoon cayenne pepper ((more or less depending on taste))

Chicken

  • 1.5 pounds boneless, skinless chicken breasts or thighs (cut into bite size pieces)

Cheese and Cream

  • 1 cup parmesan cheese (freshly shredded)
  • 1 cup heavy cream (or half and half)
  • 4 oz cream cheese (at room temperature)
  • 0.25 cup chicken broth

Instructions 

  • Cook pasta in boiling water until al dente, then drain and rinse.
  • Sauté onion, butter, and olive oil until translucent, then add bell pepper, garlic, and spices; cook until soft.
  • Add chicken and cook until fully done, then stir in cheese, cream, cream cheese, and broth; simmer until thickened.
  • Mix in cooked pasta, coat with sauce, and serve hot.

Notes

For extra flavor, garnish with chopped parsley before serving.
