A creamy, flavorful turkey dish perfect for serving over toast, biscuits, or mashed potatoes. Quick to prepare and ideal for using leftover turkey.

  • 3 cups cooked turkey (300-350 g)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth (250 ml)
  • ½ cup heavy cream (125 ml)
  • a pinch cayenne pepper (or red pepper flakes, to taste)
  • a few gratings nutmeg
  • to taste fine sea salt and ground black pepper

Instructions 

  • Shred or cut the cooked turkey into bite-sized pieces and set aside.
  • Melt butter in a skillet over medium heat, whisk in flour, and cook for 1-2 minutes.
  • Gradually whisk in chicken broth and simmer until sauce thickens, about 8-10 minutes.
  • Stir in heavy cream, season with cayenne, nutmeg, salt, and pepper, and cook for 1-2 minutes.
  • Add turkey (and vegetables if using), reheat gently, and serve hot over toast or biscuits.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
