Ingredients

  • 8 ounces Cream Cheese (softened)
  • 1.25 cups Shredded Smoked Cheddar Cheese (adds smoky depth)
  • 0.25 cups Roasted Red Peppers (drained and diced)
  • 2 tablespoons Grated Onion (provides kick)
  • 1 clove Minced Garlic (fresh is best)
  • 0.33 cups Grated Parmesan Cheese (for topping)
  • 30 medium Raw Button Mushrooms
  • to taste N/A Salt and Pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Remove stems from mushrooms and set aside.
  • Mix cream cheese, smoked cheddar, roasted peppers, onion, garlic, salt, and pepper until well combined.
  • Stuff each mushroom cap with the cheese mixture and place on a baking sheet.
  • Sprinkle grated Parmesan on top and bake for 10 minutes until golden.

Notes

For extra flavor, add a sprinkle of fresh herbs before serving.
