A hearty and delicious breakfast casserole packed with sausage, beef, and cheese, perfect for feeding a crowd.

Ingredients

Meat

  • 1 lb ground sausage
  • 6 slices beef (cooked until crispy)
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 3 cups shredded cheddar cheese (divided)
  • 1 bag frozen hash browns ((20 oz))
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 1 packet ranch seasoning mix
  • salt and pepper (to taste)

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • Brown the sausage in a skillet and cook beef until crispy. Set aside.
  • Whisk together eggs, milk, sour cream, ranch seasoning, salt, and pepper in a large bowl.
  • Combine hash browns, sausage, beef, onions, peppers, and 1 1/2 cups cheddar cheese in another bowl.
  • Spread mixture in the baking dish, pour egg mixture over, and sprinkle with remaining cheese.
  • Bake for 45–50 minutes until set and golden brown. Let rest for 10 minutes before serving.

Notes

Let the casserole cool slightly for easier slicing.
