Ingredients

  • 1 pound bacon, cooked and crumbled
  • 30 ounce frozen shredded hash brown potatoes, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 12 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Spread hash browns in the dish, then sprinkle with bacon and cheeses.
  • Whisk eggs, milk, salt, and pepper in a bowl, then pour over the mixture.
  • Bake for 45 minutes until a knife comes out clean.
  • Let stand for 10 minutes before serving.
