A delicious baked dish combining fresh courgettes, rice, and cheeses for a comforting meal.

Instructions
Preheat oven to 180°C. Sauté onion and garlic in oil until browned.
Add rice, stock cube, water, and cook briefly. Mix in grated courgette, salt, and pepper.
Pour in milk, add half the cheeses and chives, then fold together. Cover and bake for 20 minutes.
Uncover, sprinkle remaining cheese, and bake uncovered for 15 minutes until golden.
Notes
Use fresh courgettes for best flavor. Adjust cheese quantities to taste.
