A delicious baked dish combining fresh courgettes, rice, and cheeses for a comforting meal.

Ingredients

olive oil

  • 3 Tbsp olive oil

onion

  • 1 piece onion, finely diced

garlic

  • 2 cloves garlic, crushed

white rice

  • 1 cup white rice, uncooked

vegetable stock cube

  • 1 cube vegetable stock cube (*)

boiling water

  • 1 cup boiling water

courgette

  • 1 kg courgette, grated

salt

  • 1 tsp salt

ground black pepper

  • ½ tsp ground black pepper

milk

  • ½ cup milk

parmesan cheese

  • 50 g parmesan cheese, finely grated

tasty cheese

  • 100 g tasty cheese, grated

chives

  • 10 g chives, finely chopped

Instructions 

  • Preheat oven to 180°C. Sauté onion and garlic in oil until browned.
  • Add rice, stock cube, water, and cook briefly. Mix in grated courgette, salt, and pepper.
  • Pour in milk, add half the cheeses and chives, then fold together. Cover and bake for 20 minutes.
  • Uncover, sprinkle remaining cheese, and bake uncovered for 15 minutes until golden.

Notes

Use fresh courgettes for best flavor. Adjust cheese quantities to taste.
