A fresh and vibrant salsa combining sweet corn, creamy avocado, and zesty lime for a perfect appetizer or side dish.

Ingredients

Corn

  • 1.5 cups corn kernels (fresh, canned, or grilled)
  • 1 ripe avocado avocado (diced)
  • 1 cup cherry tomatoes (halved or quartered)
  • 0.25 cup red onion (finely chopped)
  • 1-2 tablespoons fresh lime juice (to taste)
  • 2 tablespoons fresh cilantro (chopped)
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • ½ jalapeño jalapeño (finely chopped, optional)

Instructions 

  • Prepare the corn: boil, grill, or thaw and char until lightly golden.
  • Gently combine corn, diced avocado, cherry tomatoes, red onion, and jalapeño.
  • Drizzle with lime juice and olive oil.
  • Add cilantro, season with salt and pepper, and toss gently.
  • Serve immediately or chill briefly; add avocado and lime just before serving.

Notes

For best flavor, add avocado and lime just before serving to prevent browning.
