Ingredients

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon unsweetened cocoa powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk (room temperature)
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 2 large eggs (room temperature)
  • 2 tablespoons red food coloring (liquid or gel)

Frosting

  • 8 ounces cream cheese (softened)
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (optional, for consistency)

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin pan with liners.
  • Mix dry ingredients; combine wet ingredients separately.
  • Cream butter and sugar, add eggs and food coloring, then alternate dry and wet ingredients.
  • Fill cupcake liners two-thirds full and bake for 18-22 minutes.
  • Cool cupcakes, then beat cream cheese and butter, add powdered sugar and vanilla to make frosting. Frost cooled cupcakes.
