Ingredients

Dry ingredients

  • 5 oz granulated sugar
  • 1 large egg
  • 6 ¼ oz all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Wet ingredients

  • 2 oz plain yogurt
  • 4 floz neutral-flavored oil
  • 2 ½ floz milk
  • 1 teaspoon vanilla extract
  • 3 oz semi-sweet chocolate chips

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin tin with 9 paper liners.
  • Mix sugar, egg, yogurt, oil, milk, and vanilla until well combined.
  • Whisk flour, baking powder, and salt in a separate bowl.
  • Combine wet and dry ingredients until just mixed, then fold in chocolate chips.
  • Fill muffin cups almost to the top and bake for 30 minutes until a toothpick comes out clean.
  • Cool in the tin for 10 minutes, then remove and serve. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for 2 months.

Notes

For best results, do not overmix the batter to keep muffins light and fluffy.
