All-purpose flour

  • 1 ½ cups all-purpose flour

Granulated sugar

  • ¾ cup granulated sugar

Buttermilk

  • ½ cup buttermilk

Vegetable oil

  • 1/3 cup vegetable oil

Large egg

  • 1 large egg

Vanilla extract

  • 1 tsp vanilla extract

Ground cinnamon

  • 1 tsp ground cinnamon

Baking powder

  • 1 ½ tsp baking powder

Baking soda

  • ¼ tsp baking soda

Salt

  • ¼ tsp salt

Finely chopped apples

  • 1 ¼ cups finely chopped apples

Instructions 

  • Preheat oven to 375°F and line a muffin tin.
  • Mix dry ingredients: flour, sugar, baking powder, soda, salt, cinnamon.
  • Whisk wet ingredients: egg, buttermilk, oil, vanilla.
  • Combine wet and dry; fold in apples.
  • Divide batter into 12 cups and bake 18–22 mins.
  • Cool for 5 mins, then transfer to rack.
