Delight in these rich, protein-packed truffles combining pumpkin spice and dark chocolate for a perfect treat.
Ingredients
Dough
1 1/2
cups
almond flour
1/4
cup
nut or seed butter

tablespoons
pumpkin puree
(Leftover from bread baking)

tablespoons
cottage cheese
1/4
cup
maple syrup
1
teaspoon
vanilla extract
1
teaspoon
pumpkin pie spice
2/3
cup
dark chocolate chips
(or chocolate of choice)
Instructions
Add almond flour, pumpkin puree, nut butter, cottage cheese, maple syrup, vanilla, and pumpkin pie spice to a food processor. Blend until smooth.
Scoop mixture and roll into balls. Place on parchment-lined plate.
Freeze for at least 30 minutes.
Melt chocolate until smooth.
Dip truffles into melted chocolate and place back on parchment. Optional: sprinkle with flaky salt.
Let set and store in freezer for up to 2 months.
