Delight in these rich, protein-packed truffles combining pumpkin spice and dark chocolate for a perfect treat.

Ingredients

Dough

  • 1 1/2 cups almond flour
  • 1/4 cup nut or seed butter
  • 3 tablespoons pumpkin puree (Leftover from bread baking)
  • 3 tablespoons cottage cheese
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup dark chocolate chips (or chocolate of choice)

Instructions 

  • Add almond flour, pumpkin puree, nut butter, cottage cheese, maple syrup, vanilla, and pumpkin pie spice to a food processor. Blend until smooth.
  • Scoop mixture and roll into balls. Place on parchment-lined plate.
  • Freeze for at least 30 minutes.
  • Melt chocolate until smooth.
  • Dip truffles into melted chocolate and place back on parchment. Optional: sprinkle with flaky salt.
  • Let set and store in freezer for up to 2 months.
