  • 2 oz high-quality dark chocolate (at least 60% cocoa)
  • 2 oz unsalted butter
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Cooking spray or butter, for greasing
  • Pinch salt

Instructions 

  • Preheat oven to 425°F (220°C). Grease ramekins.
  • Microwave chocolate and butter until smooth, then whisk eggs, yolk, and sugar until light.
  • Fold melted chocolate into egg mixture, then sift in flour and salt, folding gently.
  • Divide batter into ramekins and bake for 12–14 minutes.
  • Cool briefly, invert onto plates, and serve immediately with desired toppings.

Notes
