Delight in these vegan, gluten-free blondies packed with chocolate chunks and fun edible eyes, perfect for a spooky treat.

60grunny, smooth almond butter (or tahini for nut-free)
90mlmaple syrup
30gthick coconut yoghurt
60mlplant-based milk
1tspvanilla essence
dry ingredients
100goat flour
50gplain or GF plain flour
½tspbaking powder
¼tspbicarbonate of soda
½tspcinnamon
A pinchsalt
90gdark chocolate, chopped into chunks
30gmelted dark chocolate
A handfuledible sugar eyes or sprinkles
Instructions
Line a 6-inch square tin with parchment and preheat oven to 180ºC (160ºC fan).
Mix almond butter, syrup, yoghurt, milk, and vanilla until smooth. Add flours, baking powder, bicarbonate, cinnamon, and salt; stir to a thick batter. Fold in most chocolate chunks.
Pour batter into the tin, top with remaining chocolate, and bake for 20 minutes until golden and a skewer comes out clean.
Cool for 10 minutes in the tin, then transfer to cool completely for 30 minutes. Drizzle with melted chocolate and add edible eyes.
Slice into 9 bars and enjoy. Store in a sealed container in the fridge for 3-5 days or freeze for up to 1 month.
