Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1 2 cup sugar
  • 1 tablespoon baking powder
  • 1 2 teaspoon salt

Wet ingredients

  • 1 large egg
  • 3 4 cup milk
  • 1 3 cup canola oil
  • 3 4 cup miniature semisweet chocolate chips

Instructions 

  • Preheat oven to 400°F (200°C). Prepare muffin pan with liners or grease.
  • Mix flour, sugar, baking powder, and salt in a large bowl.
  • In a small bowl, beat egg, milk, and oil; combine with dry ingredients until just moistened.
  • Fold in chocolate chips; divide batter into 12 muffin cups, filling 3/4 full.
  • Bake for 18-20 minutes until a toothpick comes out clean. Cool for 5 minutes before transferring to a wire rack.

Notes

Use a spatula to fold in chocolate chips to avoid overmixing.
