Instructions
Butter the ramekins and dust with cocoa powder.
Melt chocolate and butter until smooth.
Whisk eggs, yolks, sugar, salt, vanilla, and espresso until pale.
Gradually fold in sifted flour and cocoa powder.
Combine cooled chocolate mixture with egg mixture, then pour into ramekins.
Bake at 220°C (425°F) for 12–14 minutes until edges are set but center is jiggly.
Notes
Serve immediately with vanilla ice cream and berries for best molten effect.
