A decadent dessert with a gooey chocolate center, perfect for chocolate lovers.

Ingredients

Chocolate and Butter

  • 200 grams Dark chocolate (60–72% cocoa), finely chopped
  • 113 grams Unsalted butter

Eggs and Sugar

  • 3 large Large eggs
  • 2 extra yolks Additional egg yolks
  • 150 grams Granulated sugar

Dry ingredients

  • 125 grams All-purpose flour, sifted
  • 10 grams Cocoa powder (for dusting ramekins)

Flavor Enhancers

  • 1 teaspoon Vanilla extract
  • 1 pinch Kosher salt
  • 1 teaspoon Espresso powder

Additional

  • Cocoa powder Cocoa powder (for dusting ramekins)

Instructions 

  • Butter the ramekins and dust with cocoa powder.
  • Melt chocolate and butter until smooth.
  • Whisk eggs, yolks, sugar, salt, vanilla, and espresso until pale.
  • Gradually fold in sifted flour and cocoa powder.
  • Combine cooled chocolate mixture with egg mixture, then pour into ramekins.
  • Bake at 220°C (425°F) for 12–14 minutes until edges are set but center is jiggly.

Notes

Serve immediately with vanilla ice cream and berries for best molten effect.
