  • 2 large ripe mangoes, peeled and cubed (about 2 cups of puree)
  • 1/2 cup full-fat coconut milk or heavy cream
  • 1/3 cup sweetened condensed milk
  • 1/2 cup whole milk
  • 2 tablespoons gelatin powder
  • 1/2 cup hot water
  • 2 tablespoons sugar (adjust to taste depending on mango sweetness)
  • optional Fresh mango chunks (for topping)
  • optional Mint leaves (for garnish)

Instructions 

  • Puree peeled mangoes until smooth, then set aside.
  • Dissolve gelatin in hot water, then cool slightly.
  • Mix coconut milk, condensed milk, milk, and sugar; add cooled gelatin.
  • Stir in mango purée until well combined.
  • Pour into molds and chill for at least 4 hours until set.
  • Serve topped with mango chunks and mint leaves if desired.
