A refreshing and smooth mango pudding with a delicate balance of sweetness and creaminess, perfect for a light dessert.

Ingredients

Mango Puree

  • 2 cups Mango Puree

Water

  • ¾ cup Water

Granulated Sugar (for puree)

  • ½ cup Granulated Sugar (for puree)

Granulated Sugar (for pudding)

  • ¾ cup Granulated Sugar (for pudding)

Unflavored Gelatin

  • 2 packets Unflavored Gelatin

Salt

  • ½ teaspoon Salt

Cold Water

  • ½ cup COLD Water

Heavy Cream (chilled)

  • 1 cup Heavy Cream (chilled)

Lime Juice

  • 1 teaspoon Lime Juice

Instructions 

  • Prepare ramekins and set aside.
  • Simmer water and sugar, blend with mango, strain to get 2 cups puree.
  • Boil water, dissolve gelatin with sugar and salt, then add boiling water.
  • Mix mango puree, heavy cream, and lime juice into gelatin mixture.
  • Pour into ramekins, refrigerate for 2 hours until set.

Notes

Use ripe mangoes for best flavor and smooth texture.
