Instructions
Prepare ramekins and set aside.
Simmer water and sugar, blend with mango, strain to get 2 cups puree.
Boil water, dissolve gelatin with sugar and salt, then add boiling water.
Mix mango puree, heavy cream, and lime juice into gelatin mixture.
Pour into ramekins, refrigerate for 2 hours until set.
Notes
Use ripe mangoes for best flavor and smooth texture.
