Chicken Tortellini Pesto Bowls

A flavorful and easy-to-make dish combining tender chicken, fresh vegetables, and cheesy tortellini, all coated in vibrant basil pesto.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breasts (sliced into 1¼-inch strips)
  • Salt and freshly ground black pepper Salt and black pepper
  • 2 tsp Italian seasoning
  • 0.5 tsp Irresistibles Garlic powder
  • 0.5 tsp Irresistibles Onion powder
  • 0.25 cup Irresistibles Sundried Tomatoes (chopped)
  • 4 tbsp Irresistibles Basil Pesto (divided)
  • 5 tbsp olive oil (divided)
  • 0.5 tsp lemon juice (plus 4 lemon slices for garnish)
  • 1 lb fresh green beans (tops trimmed)
  • 1 pint grape tomatoes (sliced into halves)
  • 350 g Irresistibles Tortellini (fresh)
  • 0.25 cup Irresistibles Basil (for garnish, chopped)

Instructions 

  • Preheat oven to 400°F. Line a baking sheet with parchment.
  • Toss chicken with seasonings, 1 tbsp olive oil, lemon juice, sundried tomatoes, and 2 tbsp pesto. Marinate.
  • Arrange chicken and lemon slices on one side of the baking sheet; toss green beans with 1 tbsp olive oil on the other side. Roast 23-25 mins, tossing green beans halfway.
  • Cook tortellini according to package, drain, toss with remaining olive oil and pesto. Season as needed.
  • Serve chicken, tortellini, green beans, and tomatoes. Garnish with basil and lemon slices.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
