A quick and flavorful dish combining tender chicken, savory teriyaki sauce, and hearty noodles, perfect for a satisfying meal.
Ingredients

400gchicken breasts(about 2 breasts)
200gnoodles (udon, ramen, soba, or spaghetti)
Sauces & Condiments
0.25cupsoy sauce
0.25cupmirin
2tablespoonsgranulated sugar or honey
1tablespoonsesame oil
2clovesgarlic, minced
1teaspoonfresh ginger, minced
1tablespooncornstarch (optional for thickening)
Garnishes
2green onionsthinly sliced, garnish
Sesame seeds(for garnish)
Instructions
Whisk soy sauce, mirin, sugar or honey, sesame oil, garlic, and ginger in a bowl until sugar dissolves. Toss chicken in marinade, refrigerate 30 min to 8 hrs.
Cook noodles in salted boiling water until tender, drain, and toss with a splash of oil.
Heat oil in a skillet over medium-high heat. Cook chicken 3-4 minutes per side until cooked through. Remove and set aside.
If using marinade for sauce, pour into skillet and simmer. Thicken with cornstarch slurry if desired.
Add noodles to skillet, toss to coat and heat through. Serve garnished with green onions and sesame seeds.
Notes
For extra flavor, marinate chicken longer or add a splash of rice vinegar to the sauce.
