Ingredients

Protein

  • 3 lbs chicken thighs, boneless & skinless
  • 1 packet mild taco seasoning (I used Siete)
  • 1 tbsp chicken bullion (callado de pollo)
  • 3 cloves garlic, minced
  • 1 piece lime, juice of
  • 0.25 cup cilantro leaves, diced
  • 2 tbsp avocado oil
  • 0.5 head cilantro leaves, about 1 cup
  • 0.33 cup sour cream
  • 0.25 pepper jalapeño pepper, more if spicy
  • 1 clove garlic
  • 1 piece lime, juice of
  • 0.25 tsp cumin powder
  • 0.25 tsp chili powder
  • 16-20 pieces corn or flour tortillas
  • 1 large avocado
  • 2 cups shredded lettuce
  • 1 diced tomato
  • Salsa for serving Salsa

Instructions 

  • Marinate chicken with seasoning, bullion, garlic, cilantro, lime juice, and oil for 1 minute to 48 hours.
  • Cook chicken in a skillet over medium-high heat until charred, about 8 minutes per side; dice after cooling.
  • Alternatively, grill chicken for 8 minutes per side, then dice.
  • Blend cilantro, sour cream, lime juice, garlic, cumin, chili powder, jalapeño, and oil until smooth.
  • Warm tortillas, then layer with chicken, lettuce, tomato, and cilantro sauce. Serve immediately.

Notes

For extra spice, add more jalapeño or hot sauce.
