Instructions
Heat oil, cook vegetables until softened (~8-10 min).
Add garlic and spices, cook 1 min until fragrant.
Pour broth, add chicken and quinoa, simmer 15-20 min until tender.
Stir in beans and peas, cook 2-3 min until heated through.
Adjust seasoning, serve garnished with parsley.
Notes
You can add more vegetables or adjust seasonings to taste.
