  • 1.5 pounds boneless skinless chicken cutlets (about 4)
  • 0.5 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 garlic cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons capers (drained and rinsed, plus more for serving)
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1 lemon lemon slices for garnish
  • 1 tablespoon chopped parsley (for serving)

Instructions 

  • Season chicken with salt and pepper, then dredge in flour.
  • Cook chicken in oil until golden, then transfer to a plate.
  • In the same skillet, add butter and garlic; cook until fragrant.
  • Stir in broth, capers, and lemon juice; simmer and return chicken to cook through.
  • Garnish with parsley and lemon slices, then serve.
