13ozPasta of your choice
2tablespoonsOlive oil
3piecesChicken breasts(cut into small cubes)
1pieceOnion(chopped)
3clovesGarlic(crushed)
2dicedBell peppers
1tablespoonTomato paste
14ozTomato sauce or chopped tomatoes

3/4cupFlour
3cupsMilk(warm)

Instructions
Preheat oven to 375°F (190°C). Prepare a baking dish and set aside.
Cook pasta in boiling salted water until al dente, then drain.
In a pan, sauté onion and garlic in olive oil, add chicken and cook until done, then add bell peppers, tomato paste, tomato sauce, and seasonings. Simmer briefly.
Make béchamel sauce: melt butter, whisk in flour, cook 1 min, then gradually add warm milk, whisking until thickened. Season with salt, pepper, and nutmeg.
Combine cooked pasta with béchamel and chicken mixture, transfer to casserole, top with grated cheeses, and bake for 25-30 minutes until golden and bubbly.
Notes
For a richer flavor, add a sprinkle of herbs or extra cheese on top before baking.
