A comforting baked dish combining tender chicken, rice, vegetables, and cheesy goodness for a satisfying meal.

Ingredients

Dairy and Vegetables

  • 4 tbsp unsalted butter
  • 1/4 cup onion (minced)
  • 8 oz white mushrooms (sliced)
  • 1 1/4 cups white long grain rice (uncooked)
  • 3 cups chicken broth
  • 2 1/2 cups white long grain rice (uncooked)
  • 3 cups cooked and diced chicken
  • 2 cups frozen peas and carrots (thawed and pat dry)
  • 1 1/2 cups milk
  • 4 oz cream cheese (light or regular)
  • 1/2 cup plain Greek yogurt (or sour cream)
  • 2 cups shredded cheddar cheese (divided)
  • 1/4 cup parmesan cheese

Herbs and Seasonings

  • 1/2 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions 

  • Preheat oven to 350°F and prepare a 9x13 inch dish.
  • Melt butter, sauté onion, mushrooms, thyme, salt, and pepper until tender.
  • Add rice, toast briefly, then stir in chicken broth and simmer covered for 15 minutes. Let stand off heat for 10 minutes.
  • Mix in cooked chicken, vegetables, milk, cream cheese, yogurt, and 1 cup cheddar. Transfer to dish, top with remaining cheeses.
  • Cover with foil, bake for 15 minutes, uncover, and bake 10 more minutes. Rest 5 minutes before serving.

Notes

For extra flavor, sprinkle fresh herbs before serving.
