Instructions
Preheat oven to 350°F and prepare a 9x13 inch dish.
Melt butter, sauté onion, mushrooms, thyme, salt, and pepper until tender.
Add rice, toast briefly, then stir in chicken broth and simmer covered for 15 minutes. Let stand off heat for 10 minutes.
Mix in cooked chicken, vegetables, milk, cream cheese, yogurt, and 1 cup cheddar. Transfer to dish, top with remaining cheeses.
Cover with foil, bake for 15 minutes, uncover, and bake 10 more minutes. Rest 5 minutes before serving.
Notes
For extra flavor, sprinkle fresh herbs before serving.
