Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Simmer pumpkin puree until reduced to 60g. Let cool.
Cream butter and sugars until light and fluffy. Mix in pumpkin, vanilla, and egg yolks.
Whisk together dry ingredients and gradually add to wet mixture until just combined.
Scoop dough onto baking sheet, sprinkle with spiced sugar topping, and bake for 10–12 minutes.
Let cool on baking sheet for a few minutes, then transfer to wire rack.
Notes
For extra flavor, add chopped nuts or chocolate chips to the dough.
