Deliciously cheesy beef tacos with a creamy Rotel sauce, perfect for a quick and satisfying meal.

Ingredients

Meat and Seasonings

  • 1-2 tablespoons olive oil (for sauteing)
  • 1 medium onion (diced)
  • 3 pounds ground beef
  • to taste taco seasoning (for beef and sauce)
  • 2 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups milk
  • 2 cans Rotel diced tomatoes with green chilies (10 ounces each, undrained)
  • 2 blocks cheddar cheese (freshly shredded)
  • 1/3 cup sour cream
  • a few dashes hot sauce (to taste)

Serving

  • as needed nacho cheese-flavored hard taco shells (for serving)
  • optional Spanish rice (for side)

Instructions 

  • Saute onion in olive oil until translucent, then add ground beef and taco seasoning; cook until browned.
  • Remove beef and onions; in the same pot, melt butter, whisk in flour, then slowly add milk, stirring until thickened.
  • Stir in Rotel, cheese, sour cream, hot sauce, and seasonings; simmer until creamy and thickened.
  • Return beef mixture to the sauce, heat through, then spoon into warmed taco shells and serve.

Notes

For extra flavor, top with fresh cilantro or additional hot sauce.
