Deliciously cheesy beef tacos with a creamy Rotel sauce, perfect for a quick and satisfying meal.
Ingredients

taco seasoning
(for beef and sauce)

Rotel diced tomatoes with green chilies
(10 ounces each, undrained)

cheddar cheese
(freshly shredded)

sour cream

hot sauce

nacho cheese-flavored hard taco shells

Instructions
Saute onion in olive oil until translucent, then add ground beef and taco seasoning; cook until browned.
Remove beef and onions; in the same pot, melt butter, whisk in flour, then slowly add milk, stirring until thickened.
Stir in Rotel, cheese, sour cream, hot sauce, and seasonings; simmer until creamy and thickened.
Return beef mixture to the sauce, heat through, then spoon into warmed taco shells and serve.
Notes
For extra flavor, top with fresh cilantro or additional hot sauce.
