Ingredients
Potatoes
2.5-3lbsyukon potatoes(thinly sliced)
1/4cupbutter
1mediumonion(diced)
8-10clovesgarlic(minced)
1/4cupall-purpose flour
2cupsmilk
1cupchicken broth
1/2tspthyme
1tspsalt
1cupcheddar(shredded)
1cupmozzarella(shredded)
3/4cupparmesan(grated)
Instructions
Slice potatoes thinly and set aside. Preheat oven to 350°F (175°C).
In a saucepan, melt butter, sauté onions and garlic, then stir in flour. Add milk, broth, thyme, and salt; cook until thickened. Remove from heat and stir in cheeses.
Layer potatoes and cheese sauce in a greased 9x13 inch casserole. Cover with foil and bake for 30 minutes, then uncover and bake for 35-45 minutes. Cool slightly before serving.
Notes
For a creamier texture, let the casserole rest for 10 minutes before serving.
