A creamy, cheesy, and flavorful potato casserole perfect for family dinners or special occasions.

Ingredients

Potatoes

  • 2.5-3 lbs yukon potatoes (thinly sliced)
  • 1/4 cup butter
  • 1 medium onion (diced)
  • 8-10 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 tsp thyme
  • 1 tsp salt
  • 1 cup cheddar (shredded)
  • 1 cup mozzarella (shredded)
  • 3/4 cup parmesan (grated)

Instructions 

  • Slice potatoes thinly and set aside. Preheat oven to 350°F (175°C).
  • In a saucepan, melt butter, sauté onions and garlic, then stir in flour. Add milk, broth, thyme, and salt; cook until thickened. Remove from heat and stir in cheeses.
  • Layer potatoes and cheese sauce in a greased 9x13 inch casserole. Cover with foil and bake for 30 minutes, then uncover and bake for 35-45 minutes. Cool slightly before serving.

Notes

For a creamier texture, let the casserole rest for 10 minutes before serving.
